MATERIAL: |
Powdered dehydrated potatoes and water for frozen food entrees. |
PROBLEM:
|
Dispersion of 350 pounds of dehydrated potato flakes into 2,000 pounds of milk in the batch method produces an unpumpable paste. Although the paste like consistency is desired in the final product, dispensing of the paste into the frozen entree is very difficult. |
EQUIPMENT:
|
Model D-6000 ARDE Dispershear. |
RESULTS:
|
Potato flakes are continuously dispersed into milk at 10 gpm. Resultant slurry is still pumpable for several seconds and quickly dispensed into individual frozen food trays |
EQUIPMENT REPLACED:
|
Bakery mixers |
BENEFITS:
|
Continuous dispersion allows dispensing into frozen food individual items before complete hydration of potato flakes. No other method worked anywhere near as well. |
