Description
OBJECT:
Aeration of cheese to make a light weight spreadable cheese.
PROBLEM: Entrain as much air as possible.
RESULT:
Deliberately maintain “low” liquid level above mixing head and operate mixer in down-mode only. This condition plus violent mixing action entrains air which is normally undesirable.
