Description
OBJECT: Disperse sugar, cocoa, tapioca starch and alginate gums into milk (6% solids) to prepare a dessert pudding.
PROBLEM:
Alginate gums and starches tend to lump up and agglomerate.
SOLUTION:
Model D-6000 Dispershear powders are pre-blended and added to Dispershear hopper. Milk is pumped into Dispershear at controlled rate and product is continuously dispensed into standardization tank.
