SALAD DRESSING STABILIZER

Description

OBJECT: Disperse small amounts (3-5 pounds) of dry ingredients including stabilizer gums, e.g., Guar Gum, Xanthan Gum, CMC into 1,100 pound batches of product.

PROBLEM: Even though this is only a small amount of gum, the slow moving mixer in the 150 gallon kettle have difficulty dispensing the gums without allowing sticky forms to form.
SOLUTION: Model D-800 Dispershear installed above process vessel to disperse downward. Only a small portion of the liquids in the entire batch are pumped through the Dispershear. All powders are conveyed through the Dispershear.
