STARCH DISPERSION FOR SOUP
Description
OBJECT:
General demonstration for: Starch into cold water, flour into hot water and mushroom sauce without mushrooms which are added later.
PROBLEM: Disperse fine powders without creating lumps or “fish eyes” and reduce time.
RESULT:
Starch: Operated mixer in down-mode for 2 minutes. Excellent results with CJ-4B mixer in 15 gallon can.
Flour: Mixer in water, run in down-mode. Then up-mode for 5 minutes. Also, CJ-4B mixer in 15 gallon can, excellent results.
Mushroom Sauce: Same as above.
AB MIXER:
CJ-4B mixer in 15 gallon pail. Model C-2, 33″ immerson, 7.5 HP X.P. motor in kettle.
